Italian Pasta Bake with Vegetables

Simple to bake for a hearty midweek meal for the family.

Ingredients

  • 8 oz. uncooked pasta, such as penne or rotini
  • 1 lb. Italian sausage or ground beef, cooked and drained
  • 1 jar (24 oz.) prepared pasta sauce
  • 1 can (29 oz.) Veg-All® Mixed Vegetables, drained
  • 2 cups mozzarella cheese, divided
  • 1/3 cup grated Parmesan cheese

Directions

  1. Heat oven to 350°F. Cook pasta according to package directions in a large saucepan or Dutch oven; drain and return to pan.
  2. Stir in cooked meat, pasta sauce, vegetables, 1 cup mozzarella cheese and Parmesan cheese.
  3. Spoon pasta mixture into a greased 13 x 9-inch baking dish and top with remaining mozzarella cheese.
  4. Cover loosely with foil and bake 30 minutes.
  5. Remove foil; bake 10 to 15 minutes longer or until cheese is bubbly.
  6. Cool 10 minutes before serving.
